What makes our pizza premium in the Illawarra?

All our pizza’s are made in our Stefano Ferrara 100% wood-fired oven, imported direct from Naples, Italy .
The method of pizza making that we use is the traditional Neopolitan method using authentic Italian ingredients. The dough is hand rolled, rested for a total of between 1 to 3 days, the oven fired at 400 degrees celsuis and the pizza cooked for 90 seconds. We only use Neopolitan 00 flour and San Marzano, premium tomatoes (D.O.P – Denomination of Product Origin) from the Agro Nocerino region near Naples and are naturally sweeter and easier to digest. The cheeses that we use are Bufala & Fior di latte mozzarella both made from the Italian domestic water buffalo.
Neopolitan pizza is meant to be thin, soft and elastic in the middle and blistered on the edges.
